In Japanese cuisine, “omakase” means chef’s choice, literally “trust the chef.” I like adhering to this concept in Japanese food because it allows me to feature seasonal and regional delicacies, as well as what looks good any given day at the farmer’s market and Japanese markets. My omakase menus usually range from 8-14 dishes, many traditional, some modern, some original. My omakase can be pescatarian, vegetarian or vegan, gluten-free or whatever else you wish.
